Thai-Style BBQ Chicken

Ingredients

  • 1kg chicken pieces (marinade)
  • 1kg chicken pieces (marinade) 4 cloves garlic, chopped
  • 4 cloves garlic, chopped 1 fresh red chilli
  • 1 fresh red chilli 2 teaspoons salt
  • 2 teaspoons black peppercorns
  • ½ cup lemon Juice
  • 1 bunch coriander (including roots), roughly chopped
  • 2 tablespoons olive oil

Directions

  1. Combine garlic, chilli, salt and peppercorns in a food processor

  2. Make a paste then stir through lemon juice, coriander and oil

  3. Rub the mixture over the chicken

  4. Cover and refrigerate for 2-3 hours or over night

  5. Cook on a pre-heated hot plate on a medium heat, turning frequently until browned and cooked through
