Tuscan-Style Chicken

Ingredients

  • 1 No. 20 chicken (2kg)
  • 2 cloves garlic, sliced
  • 1/2 lemon
  • 1 teaspoon sea salt
  • 3 fresh bay leaves
  • 1 small sprig fresh rosemary
  • 5 fresh sage leaves
  • 1 lemon, sliced thickly
  • 1 cup olive oil

Directions

  1. Pre-heat barbecue to 200 degrees celsius, with burners 2 and 5 (6burner) or 1 and 4 (4 burner) on high

  2. Pat chicken dry with kitchen paper

  3. Gently loosen skin around the breast area of chicken and insert some of the garlic slices between the skin and flesh

  4. Rub chicken with the half lemon and sprinkle generously with sea salt

  5. Fill cavity with herbs, remaining garlic and lemon slices

  6. Place dressed bird on roasting rack in roasting dish
