Slow Cooked Chicken Cacciatore

Ingredients

  • 1kg chicken pieces, skin removed
  • 1 cup plain flour
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon paprika
  • ½ cup olive oil
  • 2 medium brown onions, peeled and diced
  • 4 cloves garlic, peeled and finely chopped
  • 2 carrots, peeled and diced
  • 3 stalks celery, diced
  • 1 red capsicum, diced
  • 1 green capsicum, diced
  • 1 cup whole pitted black olives (optional)
  • 2 x 400g tins diced tomatoes
  • ½ cup white wine
  • 1 cup chicken stock
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon garlic salt

Directions

  1. Pre-heat wood fired oven to 160C

  2. Coat chicken pieces in combined flour, salt, pepper and paprika. Brown chicken pieces in hot oil over a gas flame. Place chicken and all other ingredients into large roasting dish. Cover tightly with 2 layers of foil. Cook slowly in wood fired oven until chicken is tender and coming away from the bone (approx. 1 hour)

  3. Serve with crusty bread and a glass or two of your favourite wine
